    Ingredients:

    • 2 cups Miniature Marshmallows
    • 3 cups Chocolate Chips
    • ½ cup Peanut Butter
    • 1 tsp Vanilla Extract
    • 1 ¼ cups Peanuts

    Instructions:

    Line an 8-inch-square baking pan with wax paper or foil, and coat with non-stick spray.
    Pour ½ cup of the miniature marshmallows into the bottom of the lined baking dish.
    In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave the chocolate mixture in 20-second intervals, stirring in between each interval, until the chocolate is melted.
    Add the vanilla extract and stir well, until smooth.
    Reserve 2 tablespoons of the chopped almonds or peanuts, and set aside.
    Fold 1 ½ cups of the miniature marshmallows and the remaining chopped nuts into the chocolate mixture.
    Transfer the chocolate mixture into the prepared pan and spread into an even layer. Immediately top with the reserved chopped nuts and the mallow bits or additional miniature marshmallows, if using.
    Refrigerate for 4 hours, or until set.
    Remove the fudge and wax paper from the pan. Carefully peel all of wax paper from the fudge.
    Cut the fudge into bite-sized pieces and serve.

    • 1/2 bag Rice Stick Noodles
    • 8 oz Prawns
    • 1/2 Egg
    • pinch Pepper
    • 2 tsp Sesame Seed Oil
    • 2 tbs Cornstarch
    • 4 tbs Oil
    • 1 tsp Minced Garlic
    • 1 tsp Ginger
    • 1/2 cup Onion
    • 1 cup Bean Sprouts
    • 1/2 cup Spring Onions
    • 1 tbs Cooking wine
    • 1 tbs Oyster Sauce
    • 1/2 tbs Sugar
    • 1/2 tbs Vinegar
    • 1 tbs Soy Sauce

    Instructions:

    STEP 1 – SOAK THE RICE NOODLES
    Soak the rice noodles overnight untill they are soft
    STEP 2 – BOIL THE RICE NOODLES
    Boil the noodles for 10-15 minutes and then rinse with cold water to stop the cooking process of the noodles.
    STEP 3 -MARINATING THE SHRIMP
    In a bowl add the shrimp, egg, 1 pinch of white pepper, 1 Teaspoon of sesame seed oil, 1 Tablespoon corn starch and 1 tablespoon of oil
    Mix together well
    STEP 4 – STIR FRY
    In a wok add 2 Tablespoons of oil, shrimp and stir fry them until it is golden brown
    Set the shrimp aside
    Add 1 Tablespoon of oil to the work and then add minced garlic, ginger and all of the vegetables.
    Add the noodles to the wok
    Next add sherry cooking wine, oyster sauce, sugar, vinegar, sesame seed oil, 1 pinch white pepper, and soy sauce
    Add back in the shrimp
    To thicken the sauce, whisk together 1 Tablespoon of corn starch and 2 Tablespoon of water in a bowl and slowly add to your stir-fry until it's the right thickness.

    • 450ml Chicken Stock
    • 3 Chicken Breast
    • 75g Butter
    • 2 sliced Leek
    • 2 cloves minced Garlic
    • 50g Plain Flour
    • 200ml Milk
    • 3 tbs White Wine
    • 150ml Double Cream
    • 150g Ham
    • spinkling Sea Salt
    • pinch Pepper
    • 350g Plain Flour
    • 200g Butter
    • 1 Free-range Egg, Beaten
    • 1 tbls Cold Water
    • 1 Free-range Egg, Beaten

    Instructions:

    Heat the chicken stock in a lidded saucepan. Add the chicken breast and bring to a low simmer. Cover with a lid and cook for 10 minutes. Remove the chicken breasts from the water with tongs and place on a plate. Pour the cooking liquor into a large jug.
    Melt 25g/1oz of the butter in a large heavy-based saucepan over a low heat. Stir in the leeks and fry gently for two minutes, stirring occasionally until just softened. Add the garlic and cook for a further minute. Add the remaining butter and stir in the flour as soon as the butter has melted. Cook for 30 seconds, stirring constantly.
    Slowly pour the milk into the pan, just a little at a time, stirring well between each adding. Gradually add 250ml/10fl oz of the reserved stock and the wine, if using, stirring until the sauce is smooth and thickened slightly. Bring to a gentle simmer and cook for 3 minutes.
    Season the mixture, to taste, with salt and freshly ground black pepper. Remove from the heat and stir in the cream. Pour into a large bowl and cover the surface of the sauce with cling ilm to prevent a skin forming. Set aside to cool.
    Preheat the oven to 200C/400F/Gas 6. Put a baking tray in the oven to heat.
    For the pastry, put the flour and butter in a food processor and blend on the pulse setting until the mixture resembles fine breadcrumbs. With the motor running, add the beaten egg and water and blend until the mixture forms a ball. Portion off 250g/10oz of pastry for the lid.
    Roll the remaining pastry out on a lightly floured surface, turning the pastry frequently until around 5mm/¼in thick and 4cm/1½in larger than the pie dish. Lift the pastry over the rolling pin and place it gently into the pie dish. Press the pastry firmly up the sides, making sure there are no air bubbles. Leave the excess pastry overhanging the sides.
    Cut the chicken breasts into 3cm/1¼in pieces. Stir the chicken, ham and leeks into the cooled sauce. Pour the chicken filling into the pie dish. Brush the rim of the dish with beaten egg. Roll out the reserved pastry for the lid.
    Cover the pie with the pastry lid and press the edges together firmly to seal. Trim any excess pastry.
    Make a small hole in the centre of the pie with the tip of a knife. Glaze the top of the pie with beaten egg. Bake on the preheated tray in the centre of the oven for 35-40 minutes or until the pie is golden-brown all over and the filling is piping hot.

    • 2 sliced Bacon
    • 1 lb Kielbasa
    • 1 lb Pork
    • 1/4 cup Flour
    • 3 chopped Garlic
    • 1 Diced Onion
    • 1 1/2 cup Mushrooms
    • 4 cups Cabbage
    • 1 Jar Sauerkraut
    • 1/4 cup Red Wine
    • 1 Bay Leaf
    • 1 tsp Basil
    • 1 tsp Marjoram
    • 1 tbs Paprika
    • 1/8 teaspoon Caraway Seed
    • 1 dash Hotsauce
    • 5 Cups Beef Stock
    • 2 tbs Tomato Puree
    • 1 cup Diced Tomatoes
    • 1 dash Worcestershire Sauce

    Instructions:

    Preheat the oven to 350 degrees F (175 degrees C).

    Heat a large pot over medium heat. Add the bacon and kielbasa; cook and stir until the bacon has rendered its fat and sausage is lightly browned. Use a slotted spoon to remove the meat and transfer to a large casserole or Dutch oven.

    Coat the cubes of pork lightly with flour and fry them in the bacon drippings over medium-high heat until golden brown. Use a slotted spoon to transfer the pork to the casserole. Add the garlic, onion, carrots, fresh mushrooms, cabbage and sauerkraut. Reduce heat to medium; cook and stir until the carrots are soft, about 10 minutes. Do not let the vegetables brown.

    Deglaze the pan by pouring in the red wine and stirring to loosen all of the bits of food and flour that are stuck to the bottom. Season with the bay leaf, basil, marjoram, paprika, salt, pepper, caraway seeds and cayenne pepper; cook for 1 minute.

    Mix in the dried mushrooms, hot pepper sauce, Worcestershire sauce, beef stock, tomato paste and tomatoes. Heat through just until boiling. Pour the vegetables and all of the liquid into the casserole dish with the meat. Cover with a lid.

    Bake in the preheated oven for 2 1/2 to 3 hours, until meat is very tender.

    • 2 cloves Garlic
    • 2 tsp Sea Salt
    • 4 tbs Olive Oil
    • Zest and juice of 1 Lemon
    • 1 tbs Dill
    • 750g Lamb Leg
    • To serve Pita Bread

    Instructions:

    Pound the garlic with sea salt in a pestle and mortar (or use a small food processor), until the garlic forms a paste. Whisk together the oil, lemon juice, zest, dill and garlic. Mix in the lamb and combine well. Cover and marinate for at least 2 hrs or overnight in the fridge. If you’re going to use bamboo skewers, soak them in cold water.

    If you’ve prepared the lamb the previous day, take it out of the fridge 30 mins before cooking. Thread the meat onto the soaked or metal skewers. Heat the grill to high or have a hot griddle pan or barbecue ready. Cook the skewers for 2-3 mins on each side, basting with the remaining marinade. Heat the pitta or flatbreads briefly, then stuff with the souvlaki. Add Greek salad (see 'Goes well with', right) and Tzatziki (below), if you like.

    • 1 large Banana
    • 2 medium Eggs
    • pinch Baking Powder
    • spinkling Vanilla Extract
    • 1 tsp Oil
    • 25g Pecan Nuts
    • 125g Raspberries

    Instructions:

    In a bowl, mash the banana with a fork until it resembles a thick purée. Stir in the eggs, baking powder and vanilla.
    Heat a large non-stick frying pan or pancake pan over a medium heat and brush with half the oil. Using half the batter, spoon two pancakes into the pan, cook for 1-2 mins each side, then tip onto a plate. Repeat the process with the remaining oil and batter. Top the pancakes with the pecans and raspberries.

  • Provençal Omelette Cake

    • 10 Eggs
    • 1 tbs Olive Oil
    • 2 finely chopped Courgettes
    • 3 finely chopped Spring Onions
    • 4 Red Pepper
    • 1 clove peeled crushed Garlic Clove
    • 1 Red Chilli
    • 300g Cream Cheese
    • 6 tblsp Milk
    • 4 tbs Chives
    • 2 tbs Basil
    • to serve Rocket
    • to serve Parmesan

    Instructions:

    Break the eggs into two bowls, five in each. Whisk lightly and season with salt and pepper. Heat the oil in a pan, add the courgettes and spring onions, then fry gently for about 10 mins until softened. Cool, then stir into one bowl of eggs with a little salt and pepper. Add the roasted peppers to the other bowl of eggs with the garlic, chilli, salt and pepper.
    Heat a little oil in a 20-23cm frying pan, preferably non-stick. Pour the eggs with courgette into a measuring jug, then pourabout one-third of the mixture into the pan, swirling it to cover the base of the pan. Cook until the egg is set and lightly browned underneath, then cover the pan with a plate and invert the omelette onto it. Slide it back into the pan to cook the other side. Repeat with the remaining mix to make two more omelettes, adding a little oil to the pan each time. Stack the omelettes onto a plate. Make three omelettes in the same way with the red pepper mixture, then stack them on a separate plate.
    Now make the filling. Beat the cheese to soften it, then beat in the milk to make a spreadable consistency. Stir in the herbs, salt and pepper. Line a deep, 20-23cm round cake tin with cling film (use a tin the same size as the frying pan). Select the best red pepper omelette and place in the tin, prettiest side down. Spread with a thin layer of cheese filling, then cover with a courgette omelette. Repeat, alternating the layers, until all the omelettes and filling are in the tin, finishing with an omelette. Flip the cling film over the omelette, then chill for up to 24 hrs.
    To serve, invert the omelette cake onto a serving plate and peel off the cling film. Pile rocket on the top and scatter over the cheese, a drizzle of olive oil and a little freshly ground black pepper. Serve cut into wedges.

    • 800g Potatoes
    • 3 Onions
    • 2 tblsp Olive Oil
    • 100ml Chicken Stock
    • 1 pot Creme Fraiche
    • Topping Parmesan
    • 4 Chicken Breasts
    • 4 Bacon
    • Topping Spinach
    • Topping Peas

    Instructions:

    15 minute potato gratin with chicken and bacon greens: a gratin always seems more effort and more indulgent than ordinary boiled or roasts, but it doesn't have to take 45mins, it's nice for a change and you can control the calorie content by going with full fat to low fat creme fraiche. (It's always tastes better full fat though obviously!) to serve 4: use 800g of potatoes, finely slice and boil in a pan for about 5-8 mins till firmish, not soft. Finely slice 3 onions and place in an oven dish with 2 tblsp of olive oil and 100ml of chicken stock. Cook till the onions are soft then drain the potatoes and pour onto the onions. Season and spoon over cream or creme fraiche till all is covered but not swimming. Grate Parmesan over the top then finish under the grill till nicely golden. serve with chicken and bacon, peas and spinach.

    • 3 cups Broad Beans
    • 6 Spring Onions
    • 4 Garlic Clove
    • 1/4 cup Parsley
    • 2 tsp Cumin
    • 1 tsp Baking Powder
    • 1/2 tsp Cayenne Pepper
    • Spinkling Flour
    • As required Vegetable Oil

    Instructions:

    oak the beans in water to cover overnight.Drain. If skinless beans are unavailable, rub to loosen the skins, then discard the skins. Pat the beans dry with a towel.
    Grind the beans in a food mill or meat grinder.If neither appliance is available, process them in a food processor but only until the beans form a paste. (If blended too smoothly, the batter tends to fall apart during cooking.) Add the scallions, garlic, cilantro, cumin, baking powder, cayenne, salt, pepper, and coriander, if using. Refrigerate for at least 30 minutes.
    Shape the bean mixture into 1-inch balls.Flatten slightly and coat with flour.
    Heat at least 1½-inches of oil over medium heat to 365 degrees.
    Fry the patties in batches, turning once, until golden brown on all sides, about 5 minutes.Remove with a wire mesh skimmer or slotted spoon. Serve as part of a meze or in pita bread with tomato-cucumber salad and tahina sauce.

    Vietnamese Grilled Pork (bun-thit-nuong)

    Ingredients:

    • 1.5 pounds sliced Pork
    • 1 package thin Rice Vermicelli
    • 4-6 Egg Rolls
    • 3 tablespoons minced Challots
    • 1.5 tablespoons minced garlic Garlic
    • ¼ cup Sugar
    • 1 tablespoon Fish Sauce
    • ½ tablespoon thick Soy sauce
    • ½ tablespoon Pepper
    • 3 tablespoons Olive Oil
    • Sliced Cucumber
    • Leaves Mint
    • Crushed Peanuts

    Instructions:

    Slice the uncooked pork thinly, about ⅛". It helps to slightly freeze it (optional).
    Mince garlic and shallots. Mix in a bowl with sugar, fish sauce, thick soy sauce, pepper, and oil until sugar dissolves.
    Marinate the meat for 1 hour, or overnight for better results.
    Bake the pork at 375F for 10-15 minutes or until about 80% cooked. Finish cooking by broiling in the oven until a nice golden brown color develops, flipping the pieces midway.
    Assemble your bowl with veggies, noodles, and garnish. Many like to mix the whole bowl up and pour the fish sauce on top, but I like to make individual bites and sauce it slowly.
